Tavoleto is an unusual choice we made and a challenge we took with the intention of interpreting a great international variety , like Chardonnay, by giving it a personal and unique touch.

Variety: 100% Chardonnay
Vine training system: Gobelet
Altitude: 550 m.s.l.
Vinification: After pressing and destemming, prefermentation cold soaking is carried out over 24 hours and ends with the gentle pressing of the berries. The alcoholic fermentation takes place in steel tanks.
Ageing: At least 5 months in steel tanks on its fine lees plus 3 months of bottle ageing before its release.
Winemaker’s note: The variation of temperature between night and day, the nature of the soils and the gobelet training system are all factors that contribute to the uniqueness of our Chardonnay. Even if fruit aromas have the leading role with notes of green apple, apricot, peach, citrus and exotic fruit, there are also mineral and flower aromas. On the palate it is fresh and saline, it reveals a strong acidity and a salty tang that allows it to be defined as “tasty”. Its vigorous and balanced structure make it interesting to taste even after some years of bottle aging.
